A rocket & radish summer salad

I’m all about that bass having simple, impressive recipes up my sleeve. The type that I can run home from work, whip up in no time and take to a friends. I was after a recipe that was simple but still damn fancy; or at least appears damn fancy.

This rocket and radish salad is just that because it involves Parmesan and walnuts. In my mind, anything with Parmesan and walnuts is fancy.. don’t you agree? Yes? Great, we are now friends. 
 
It requires very little prep time – just slice a few radishes, shave some Parmesan and STOP, assemble time! *must be wearing  Hammer Pants.

It is the first time I have ever made a salad with radish, which is really exciting for me (my life….) and something I love about this blog – it pushes me to try new things, acquire new skills and go out of my comfort zone in the kitchen.
 
Jackson is up for the adventure and he is more than happy to take the good with the bad so he is allowed to stay… for now. 
 
Speaking of Jackson, he wasn’t completely satisfied with ‘grass and hard milk with purple apple’ for dinner, so I also gave The (awesome) Hungry Babushka’s parmesan popcorn chicken recipe a go as a side. That shut him up real good – take a look, even I was impressed!

Upon reflection of the ‘first time cooking with radishes thing’, here are some recipes I would have never made it if wasn’t for this blog, and some other fancy things you can make for summer entertaining if this recipe doesn’t float your boat.

Rocket & Radish salad
Serves 2
A flavoursome summer salad with rocket, radishes, avocado, parmesan and walnuts drizzled with a lemon dressing perfect for a BBQ

Ingredients
  1. 3 washed radishes, thinly sliced
  2. 1 ripe avocado
  3. 2 cups rocket (arugla)
  4. 1/3 cup shaved parmesan/pecorino cheese
  5. 1/3 cup walnuts (unsalted)
For the dressing
  1. 2 tbsp olive oil
  2. juice of 1/4 a lemon
  3. small clove minced garlic
  4. salt
  5. pepper
  6. 1/2 teaspoon rice malt syrup (or honey/maple) to sweeten
Instructions
  1. Mix olive oil, lemon juice, crushed salt, pepper and rice malt/honey/maple in a jar/container and shake thoroughly to combine. Set aside
  2. Wash and thinly slice the radishes (season with salt and pepper), dice the avocado and shave the parmesan/pecorino
  3. In a large bowl, combine the rocket, radish, parmesan, avocado, walnuts and drizzle with the shaken dressing once ready to serve - enjoy!
Notes
  1. So simple! You can use red wine vinegar or a japanese dressing instead of the lemon dressing.

    I made my own duck pancakes with homemade plum sauce recently!

    Plum sauce wasn’t *perfect* but it can improve!

    YUUUMMM… I will have to try this!! I tried a chicken livers dish today out of the Pete Evens book. I was very hesitant
    preparing it cos it really looks and feels funny but the end result was OMG.

      Yes I am unsure if I could do the livers, but I am sure the end result was tasty and you forgot about it soon after!
