My boyfriend and I have got into the habit of having a weekly dinner meal plan thingy, which saves time, money and weird what’s-left-at-the-supermarket-at-7pm dinner choices.

My dinner always becomes lunch the next day, so we manage to sort out the majority of our weekday eating this way. It’s also very flexible – if one of us forgets that we have other plans, an extra meal goes into the freezer (I like freezing leftovers way too much..).
They are all quick and simple, but don’t sacrifice nutrition or budget as a result. I am all about that
If you get really stuck, breakfast for dinner is always a safe go to option so I channel my inner eggs and usually have eggs.
