6 quick weeknight meals

Finding the time to cook dinner every night after work takes considerable energy and effort, and as I have discovered, planning is essential. As per usual, all meals are vegetarian and click on the images for links to the recipes. These 6 quick weeknight meals will be a god send, trust me.

My boyfriend and I have got into the habit of having a weekly dinner meal plan thingy, which saves time, money and weird what’s-left-at-the-supermarket-at-7pm dinner choices.

My dinner always becomes lunch the next day, so we manage to sort out the majority of our weekday eating this way. It’s also very flexible – if one of us forgets that we have other plans, an extra meal goes into the freezer (I like freezing leftovers way too much..).

They are all quick and simple, but don’t sacrifice nutrition or budget as a result. I am all about that bass nutrition!

If you get really stuck, breakfast for dinner is always a safe go to option so I channel my inner eggs and usually have eggs.

    Things are very similar in my household! My boyfriend and I have a plan for dinner and eat leftovers for lunch. Well, actually let’s face it, I do most of the planning, but Rene helps with grocery shopping, prepping and doing dishes, so I’m not complaining.

    One of my favorite things to do is visit the farmer’s market during the week, pick up a bunch of gorgeous produce, and let it be the guide for all the meals that week 🙂

      I’m much of the same… I brainstorm the ideas but he’s very happy to help do the dishes so I think we’re pretty lucky!! I love the farmers market inspiration. That’s going to be a goal for the new year!! Thanks Alexandra. x

    we try to manage our weekly meals simlarly to how you do, but i’ve been feeling a little lazy lately and have been wanting to cut corners by ordering in. i think part of it is that it’s the holdiay season and there’s so much going on, but another reson is becaue i was kind of in a recipe rut. you’ve given me some good ideas though and knowing that they come together easy is incentive. first up on my list to try is that chinese eggplant dish, yum!!

    I’ve started meal planning because it saves so much money to just do one big shop- as horrible as that shop is 🙂

      I have been doing it online!!!!! Buying the basics on line then getting some top ups from the organic store on Gertrude st because it’s just so easy!

    I think this post should be renamed “Suppers to salivate over!” I spy with my little eye, an egg and asparagus galette. And I’m totes checking out the eggs in leftover chilli. We always meal plan because it saves time, money and worrying about what to cook every night. I’m loving all these ideas!

      It saves so much time and energy – I couldn’t get through the week without it! I know.. I am a fan of eggs. As a vego they give me soem good stuff I couldn’t function without! Thanks Sammie x

    All delicious and perfect for this time of the year when you are making lots of things for functions so want quick, easy and healthy for dinner. I especially like the pea and halloumi salad.

    Probably the only reason why I can go back home in Europe is that I miss my kitchen, I miss cooking my own meals. Now I would love to make these dishes (I like them all) and tag you!
