7 simple lunch ideas

I wish I could say I made delicious extravagant meals all the time.. but alas that is not the case. We live in a busy world where time is key and sometimes you need a quick, simple and nutritious lunch to fuel and nourish you. Here are 7 Simple Lunch Ideas.

I’ve had some people ask me what I make for myself for a quick lunch when I am pressed for time but don’t want to buy something. Well this one’s for you guys.

7 Simple Lunch Ideas

These can me made at home or have the ingredients prepared in the morning to take to work to be assemble there. 

1. Roast Tomato and Goats Cheese Ciabatta w/ Lemon and Chives

Directions: Slice the tomato and bake in oven for 10-12 mins. When tomato is almost ready to be removed toast the bread, spread goats cheese (or cottage cheese, cream cheese), top with tomato, season with S&P, chives and a squeeze of lemon.

2. Avocado and Tomato bagel with Ricotta

Directions: Toast your bagel and whilst toasting, slice the tomato & avocado. Once bagel is ready, spread avocado on bagel, top with tomato and ricotta cheese. Season and enjoy!  

3. Juicy Tomato and Hummus on toast

Directions: Make hummus (recipe here) or buy hummus, toast the toast, spread a generous amount of hummus and top with tomato and lemon thyme (yum!)

My number one trick: Tomato on everything! These types of meals are personal favorites because they are so simple. I love tomato, but if it’s not for you, you could replace it with cucumber, avocado, capsicum or spinach.  Adding a vegetable in there ensures you’re getting the vitamins and nutrients you need to continue on your day.

4. Couscous and Spinach Salad
Couscous is my go to when I need to make a quick salad. It’s quick to cook, versatile, soaks up flavour and I use a wholemeal couscous so it keeps me full until dinner time.

Directions: Cook the couscous as per packet instructions, season with olive oil, salt, pepper and 1 teaspoon ground cumin. Mix with a handful of spinach leaves, cherry tomatoes, mozzarella/ricotta, cucumber and a drizzle of balsamic reduction or other dressing. Enjoy!

5. Oven Roasted Veggie Stack
Veggies are so easy to season and roast in the oven and you can continue working/doing something whilst they are in the oven!

Directions: Season Mushrooms with a sprinkle of ground cumin and rosemary. Place in the oven with the tomato on 180 deg cel for about 12-15 minutes. Once you are happy with them, remove and stack on a bunch of greens. Sprinkle with feta, ricotta or chèvre and enjoy! 

6. Easy Baked Eggs with Soldiers
Baked eggs can be very simple to throw together, place in the oven and are a nutritious lunch, brunch or breakfast. This took me 2 minutes of prep and 8 minutes in the oven!

Directions: Use 1/3 tin diced tomatoes drained and place in a baking dish. Make a well in the tomatoes then crack an egg into that well. Repeat with the second egg. Bake in the oven 180deg cel for 8-10 minutes. Remove and sprinkle with chopped spinach and basil, serve with toast soldiers. 

7. Oven Baked Fries w/ Herbed Sea Salt 
This isn’t the healthiest, but if the mood for hot chips strikes these are baked, not fried and can be made at home instead of buying. A healthier alternatitve to McDonalds!

    I’ve got a tomato plant bursting with tomatoes so these are perfect! I also like having chicken, avocado, mushroom and cheese on melted on a ciabatta. It’s like a cafe meal at home!

    I’ve had a pretty restrictive and somewhat boring diet for a little while now while we try and work out what is going on with my health. I’m looking forward to adding a lot more variety soon. Lunch at the moment is usually soup or a green smoothie. Right now I’m dreaming of a mango salsa on smoked salmon.

    Haha, I know! Eeeep. I love them and they are just so easy but if the aren’t for you, maybe cucumber or other veggies?! Yeah I am the same but if I incorporate some sort of carb (plus protien – ricotta or some sort of cheese for me) I am fine! Bec x

    Hahaha, I couldn’t help but notice that six of your seven recipes include tomatoes! I love the idea of a couscous salad, since one with just spinach usually leaves me ravenous by four o’clock.

    Whole meal cous cous?? I love cous cous but don’t usually buy it because nutritionally it is a bit token but wholemeal? Is that a fancy Fitzroy deli type thing?
