I tried Bircher Muesli the other day for the first time (bit behind.. I know) and okay okay, I get what all the fuss is about. Its basically like a dessert for breakfast!
I decided to make it at home, it was easy to make and completly customaizable. It required basically NO effort and I pre made it the night before; you could make a batch for the week and it would be no hassle, cheap and delicious.
Homemade Bircher Muesli serves 2
Ingredients: 2 cups muesli, 1/2 cup apple juice, 1 cup yoghurt – I used greek, a pinch of cinnamon, teaspoon of vanilla essence, fruit for the toppings. I used shaved coconut, blueberries, strawberries and goji berries.
- Remove all nuts from muesli and store aside overnight. We will re-add them in the morning so they give a bit of a crunch. Soak 2 cups muesli in 1/2 cup apple juice and 1/2 cup yoghurt. Add a pinch of cinnamon and a teaspoon of vanilla essence. Mix so all the muesli gets covered, then cover bowl and place in fridge overnight. (1 hour will actually do it if making in the morning)
- In the morning, re-add the nuts, add other 1/2 cup yoghurt and a dash of apple juice, then sprinkle with coconut and arrange fruit! Sprinkle a bit of cinnamon on top if you are a huge fan (see, I told you.. easy as pie)
You can add anything – grated apple? go for it, passion fruit? YES! Whatever floats your muesli boat.
It looks so nice with some micro herb mint on top also, but I forgot to buy some (secretly devastated). It made my early morning this morning a bit easier knowing I had this in my fridge ready to go. That will get my morning routine going too.
I will be maing this regulary, and adding everything I can get my hands on. Whats some secret goodies you can add to make this healthier? Or yummier?
